Keto Mexican Stuffed Peppers

These Keto Mexican Stuffed Peppers are a delicious and healthy twist on traditional stuffed peppers. Packed with flavor and low in carbs, they make the perfect meal for Cinco De Mayo or any day of the week.

Ingredients:

  • 4 large bell peppers, halved and seeds removed
  • 1 pound ground beef
  • 1 cup cauliflower rice
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Avocado slices, for serving

Instructions:

Warm the oven up to 190C 375F

Cook the ground beef in a pan until it turns brown

Add the garlic and onion and cook until they get soft

Diced tomatoes, chili powder, cumin, paprika, and cayenne pepper should be added

Let it cook for 5 to 7 minutes, or until the cauliflower rice is soft

Add pepper and salt to taste

Gently press down on each half of the bell pepper to fill it with the beef mixture

Stuff the peppers and put them in a baking dish

Put foil over it and bake for 25 to 30 minutes

Take off the foil and top the peppers with shredded cheese

Bake for another 5 to 7 minutes, until the cheese melts and bubbles

Serve with avocado slices and chopped cilantro on top
