Ingredients:
- 1 pre-made whole wheat pie crust
- 1 bunch fresh asparagus, trimmed and chopped
- 1 cup low-fat milk
- 4 large eggs
- 1/2 cup shredded low-fat cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon olive oil
- Optional: 1/2 cup diced vegetarian ham or mushrooms for vegetarian option
Instructions:
Preheat oven to 375F 190C
In a skillet, heat olive oil over medium heat
Add asparagus and cook until tender, about 5 minutes
If using vegetarian ham or mushrooms, add them to the skillet and cook until heated through, about 2-3 minutes
In a mixing bowl, whisk together milk, eggs, salt, pepper, and garlic powder
Place pie crust in a pie dish
Arrange cooked asparagus and vegetarian ham or mushrooms if using evenly on the crust
Sprinkle cheddar cheese and Parmesan cheese over the asparagus
Pour the egg mixture over the asparagus and cheese
Bake in the preheated oven for 35-40 minutes, or until the center is set and the top is golden brown
Allow the quiche to cool for a few minutes before slicing and serving
