Dark Side of The Moon Cupcakes

Enjoy the deep and rich flavors of these Dark Side of the Moon Cupcakes. They have a moist chocolate base, dark chocolate chips, and a rich ganache topping. Chocolate lovers will love them. Great for special events or just because you want a dessert that tastes like heaven.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 3/4 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1/2 cup strong brewed coffee
  • 1/2 cup dark chocolate chips
  • 1/2 cup crushed chocolate cookies like Oreos
  • 1/2 cup dark chocolate ganache for topping
  • 1/4 cup crushed chocolate cookies for garnish
  • Silver food coloring optional

Instructions:

Preheat your oven to 350F 175C and line a cupcake tin with cupcake liners

In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt

In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract

Add the wet ingredients to the dry ingredients and mix until well combined

Stir in the boiling water and brewed coffee until the batter is smooth

Be careful, as the batter will be thin

Fold in the dark chocolate chips and crushed chocolate cookies

Pour the batter into the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean

Remove the cupcakes from the oven and allow them to cool completely

Once cooled, drizzle each cupcake with dark chocolate ganache and garnish with crushed chocolate cookies

Optionally, add a touch of silver food coloring for a celestial look
