Garlic pesto adds a lot of flavor to grilled shrimp that tastes great. Great for a quick and tasty barbecue
Ingredients:
- 1 lb large shrimp, peeled and deveined
- 2 cups fresh cilantro leaves, packed
- 1/2 cup roasted unsalted peanuts
- 3 cloves garlic
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions:
Warm up the grill over medium-high heat
Put the peanuts, cilantro, garlic, Parmesan, and lime juice in a food processor and blend them together
Pulse until the food is very small
While the processor is running, add the olive oil little by little until the pesto is smooth
Add pepper and salt to taste
Put the shrimp on the skewers that have been soaked
Spread cilantro pesto on both sides of each shrimp
Grill the shrimp for two to three minutes on each side, or until they turn opaque and get grill marks
For dipping, serve the grilled shrimp with more cilantro pesto
