Plum and Fried Halloumi Salad with Maple-Nut Clusters

A delicious and satisfying salad featuring sweet plums, crispy fried halloumi cheese, and maple-nut clusters. Perfect for a light lunch or dinner.

Ingredients:

  • 4 plums, pitted and sliced
  • 8 oz halloumi cheese, sliced
  • 4 cups mixed greens
  • 1/2 cup chopped pecans
  • 2 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

In a skillet, toast the chopped pecans over medium heat until fragrant

Drizzle with maple syrup and cook for an additional minute

Transfer to a parchment-lined sheet to cool and harden into clusters

In the same skillet, fry the halloumi slices for about 1-2 minutes per side until golden brown

Remove from heat and set aside

In a large bowl, combine the mixed greens, plum slices, and fried halloumi

In a small bowl, whisk together olive oil and balsamic vinegar

Season with salt and pepper to taste

Drizzle the dressing over the salad and toss gently to combine

Top the salad with the maple-nut clusters

Serve immediately and enjoy
