Ingredients:
- 1 15-ounce can chickpeas, drained and rinsed
- 1/4 cup fresh lemon juice 1 large lemon
- 1/4 cup well-stirred tahini
- 1 small garlic clove, minced
- 2 tablespoons extra-virgin olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- Salt to taste
- 2 to 3 tablespoons water
- Dash of ground paprika, for serving
- Chopped fresh parsley, for garnish
Instructions:
Put the tahini and lemon juice in a food processor and blend them together
Do this for one minute
Mix the garlic that has been minced, cumin, and a pinch of salt together
Do this for one more minute
Rinse the chickpeas really well after opening the can
Put half of the chickpeas into the food processor and run it for one minute
Clean the bowls sides and bottom, then add the rest of the chickpeas
For about one to two minutes, process the mixture until it is smooth and creamy
Slowly add two to three tablespoons of water while the food processor is running until the hummus is the consistency you want
You can add more salt, lemon juice, or cumin to the hummus if you think it needs it
Place the hummus in a bowl for serving
Pour olive oil over the top and decorate with paprika and chopped fresh parsley
Chips, crackers, or vegetable sticks go well with it
