Colombian Sancocho in Pressure Cooker

A hearty Colombian stew called Sancocho that is made in a pressure cooker with different kinds of meat, root vegetables, and fragrant spices.

Ingredients:

  • 2 lbs chicken, cut into pieces
  • 1 lb pork ribs
  • 1 lb beef brisket, cut into chunks
  • 3 ripe plantains, peeled and sliced
  • 2 corn cobs, cut into halves
  • 2 medium cassava roots, peeled and cut into chunks
  • 2 green plantains, peeled and sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 bunch cilantro, chopped
  • 2 green onions, chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp ground achiote annatto
  • Salt and pepper to taste
  • 8 cups water

Instructions:

Season chicken, pork ribs, and beef brisket with salt, pepper, cumin, and oregano

Turn on the pressure cooker and select the saut function

Sear the seasoned meats until browned on all sides

Add chopped onion and minced garlic, saut until aromatic

Pour in 8 cups of water and add the ground achiote, stirring well

Secure the lid of the pressure cooker and set it to high pressure for 20 minutes

Once the pressure cooking is done, release the pressure naturally for 10 minutes, then quick release any remaining pressure

Open the lid and add the sliced plantains, cassava, green plantains, corn cobs, and chopped cilantro

Secure the lid again and pressure cook for an additional 10 minutes

Release the pressure naturally and open the lid

Adjust seasoning if necessary, and sprinkle chopped green onions on top

Serve the Colombian Sancocho hot and enjoy
