The lamb shanks are cooked slowly in a red wine and herb sauce until they are soft and full of flavor.
Ingredients:
- 2 lamb shanks
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup red wine
- 1 cup beef broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Instructions:
Season lamb shanks with salt and pepper
Heat olive oil in a skillet over medium-high heat
Sear lamb shanks until browned on all sides, about 3 minutes per side
Transfer lamb shanks to slow cooker
Add onion, garlic, carrots, and celery to the skillet and saut until softened
Deglaze the skillet with red wine, scraping up any browned bits
Pour wine mixture over lamb shanks in the slow cooker
Add beef broth, rosemary, and thyme to the slow cooker
Cover and cook on low for 8 hours or until lamb is tender
Serve hot, spooning sauce over lamb
