Grilled Veggie Kabobs

These Grilled Veggie Kabobs are a delicious and colorful addition to your BBQ. The balsamic marinade adds a flavorful kick to the assortment of vegetables. Perfect for a vegetarian grilling feast

Ingredients:

  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 1 cup button mushrooms
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

To make a marinade, mix olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper in a bowl with a whisk

On skewers, put the mushrooms, bell pepper, zucchini, red onion, and cherry tomatoes

Brush the vegetable skewers all over with the marinade to make sure they are covered evenly

Warm up the grill over medium-high heat

Turn the kabobs over every so often for 10 to 15 minutes, or until the vegetables are charred and soft

Enjoy while hot
